This ham and cheese quiche is a rich and savory dish made with eggs, cheddar cheese, Swiss cheese, diced ham, and a flaky pie crust. Perfect for breakfast, brunch, or a light dinner.

1 refrigerated pie crust for 9-inch pie

1 cup shredded Cheddar cheese

1/2 cup shredded Swiss cheese

2 tablespoons all-purpose flour

1/2 cup diced cooked ham

2 tablespoons honey mustard

1 1/4 cups half-and-half

5 large eggs

1/4 cup chopped green onions

1/4 teaspoon salt

Instructions

1. Preheat oven to 400°F (200°C).

2. Press pie crust into a 9-inch pie dish and bake for about 5 minutes.

3. Poke holes with a fork and bake another 5 minutes until lightly golden.

4. Reduce oven temperature to 350°F (175°C).

5. Combine cheddar cheese, Swiss cheese, and 1 tablespoon flour then spread over crust.

6. Mix diced ham with honey mustard and spoon over the cheese layer.

7. In a bowl whisk half-and-half, eggs, green onions, remaining flour, and salt.

8. Pour egg mixture over the ham and cheese.

9. Top with remaining cheddar cheese.

10. Bake for 40–50 minutes until the center is set.

11. Cool for 10 minutes before slicing and serving.

Notes

Pre-baking the crust helps prevent a soggy bottom.

Allow the quiche to rest before cutting so the filling sets properly.

You can substitute milk or cream for half-and-half depending on preference.
