2 1/4 cups all-purpose flour 2 1/2 tablespoons caster sugar Pinch of salt 4 teaspoons baking powder 1 1/3 cups full-fat milk 1/2 teaspoon vanilla essence 4 large eggs 150g unsalted butter, melted
1. Whisk flour, sugar, baking powder and salt together. Add milk, eggs and vanilla. Whisk until combined. Add melted butter and whisk until smooth. Cover and refrigerate for at least 2 hours. Preheat waffle maker. Pour batter into waffle iron. Cook until golden brown and crisp. Serve with desired toppings.
Resting the batter improves texture and flavor. Do not overfill the waffle iron. Store leftovers in refrigerator for 3 to 4 days. Freeze for up to 3 months.
