This sweet potato ground beef bowl is a healthy, high-protein meal packed with roasted sweet potatoes, savory ground beef, and fresh toppings like avocado and cottage cheese. Perfect for quick dinners or meal prep.
2 medium sweet potatoes (cubed)
1 lb ground beef
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon chili powder
Salt and black pepper to taste
1 avocado sliced
1/4 cup cottage cheese
Fresh parsley or cilantro
Optional toppings: cherry tomatoes, hot sauce, shredded cheese
1. Preheat oven to 400°F (200°C).
2. Peel and cube sweet potatoes.
3. Toss with olive oil, paprika, garlic powder, salt and pepper.
4. Spread on baking sheet and roast for 20–25 minutes.
5. Heat skillet over medium heat and cook ground beef until browned.
6. Season beef with chili powder, salt and pepper.
7. Add roasted sweet potatoes to a bowl.
8. Top with ground beef, avocado slices and cottage cheese.
9. Finish with fresh herbs and optional toppings.
Cut sweet potatoes evenly so they cook uniformly.
