Creamy, tangy street corn pasta salad inspired by Mexican elote with grilled corn, lime dressing, and bold flavors.

Ingredients

8 oz pasta

5 ears corn

1 cup tomatoes

4 green onions

1/4 cup cilantro

2 jalapeños

1 cup cotija cheese

1/2 cup sour cream

1/2 cup mayonnaise

1/4 cup lime juice

2 tsp chili powder

2 tsp hot sauce

Instructions

1. Cook pasta and let cool

2. Grill corn and cut kernels

3. Chop vegetables

4. Mix dressing ingredients

5. Combine pasta, corn, veggies, cheese

6. Add dressing and mix well

7. Chill before serving
