These strawberry scones are soft, buttery, and bursting with fresh strawberries. Perfect for breakfast, brunch, or afternoon tea. Easy to make with simple ingredients and bakery-style results every time.

Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup cold unsalted butter, cubed

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

1 cup fresh strawberries, chopped and patted dry

Extra cream for brushing

Optional: coarse sugar for topping

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk flour, sugar, baking powder, and salt.

3. Cut in cold butter until mixture resembles coarse crumbs.

4. In a small bowl, whisk cream, egg, and vanilla.

5. Gently mix wet ingredients into dry ingredients until just combined.

6. Fold in chopped strawberries carefully.

7. Turn dough onto floured surface and shape into a 1-inch thick circle.

8. Cut into 8 wedges and place on baking sheet.

9. Chill for 15 minutes in the refrigerator.

10. Brush tops with cream and sprinkle with coarse sugar.

11. Bake 15–20 minutes until golden brown.

12. Cool slightly before serving.

Notes

Keep butter and cream cold for flaky texture.

Do not overmix the dough.

Pat strawberries dry to prevent excess moisture.

Best served warm the day they are baked.
