This strawberry chicken salad is fresh, healthy, and packed with flavor. Juicy strawberries, tender grilled chicken, crisp greens, and crunchy nuts are tossed with a light homemade dressing for the perfect sweet and savory salad.

Ingredients

2 cups cooked grilled chicken breast, sliced

4 cups fresh spinach or mixed greens

1 cup fresh strawberries, sliced

1/4 cup red onion, thinly sliced

1/4 cup toasted almonds or pecans

1/4 cup crumbled feta cheese

1/2 avocado, sliced (optional)

Dressing:

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

Salt to taste

Black pepper to taste

Instructions

1. Wash and dry the spinach or mixed greens thoroughly.

2. Slice the strawberries and thinly slice the red onion.

3. Cook or grill the chicken breast and slice into strips.

4. Toast the almonds or pecans in a dry pan for 2–3 minutes until fragrant.

5. In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.

6. Place greens, strawberries, chicken, onion, and nuts in a large bowl.

7. Sprinkle feta cheese over the salad.

8. Drizzle the dressing on top just before serving.

9. Toss gently and serve immediately.

Notes

Use ripe strawberries for the best sweetness.

Add dressing only before serving to keep greens fresh.

You can substitute goat cheese for feta.

Grilled shrimp can replace chicken for variation.
