These Strawberry Cheesecake Bars feature a buttery graham cracker crust, a smooth and creamy cheesecake filling, and a fresh strawberry topping. Perfect for spring desserts, parties, or make-ahead treats.

2 cups graham cracker crumbs

1/2 cup melted butter

1/4 cup sugar

16 oz cream cheese, softened

1/2 cup sugar

2 eggs

1 teaspoon vanilla extract

1/1/2 cup sour cream

2 cups fresh strawberries, chopped

1/3 cup sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

2 tablespoons water

Instructions

1. Preheat oven to 350°F (175°C) and line a baking pan.

2. Mix graham cracker crumbs, melted butter, and sugar then press into the pan.

3. Bake crust for 8–10 minutes and let cool slightly.

4. Beat cream cheese and sugar until smooth.

5. Add eggs one at a time, then mix in vanilla and sour cream.

6. Pour cheesecake mixture over crust and spread evenly.

7. Bake for 30–35 minutes until center is set.

8. Cool completely then refrigerate for at least 3 hours.

9. Cook strawberries with sugar and lemon juice over medium heat.

10. Mix cornstarch with water and stir into strawberries until thickened.

11. Let topping cool then spread over chilled cheesecake.

12. Slice into bars and serve.

Notes

Use room temperature cream cheese for a smooth filling.

Chill thoroughly before slicing for clean cuts.

You can substitute strawberries with other berries.

Store in refrigerator for up to 5 days.
