8 tablespoons unsalted butter melted 12 graham cracker sheets 1/4 cup all-purpose flour 3/4 cup granulated sugar divided 1/2 teaspoon kosher salt divided 16 ounces cream cheese softened 1 tablespoon vanilla extract 2 large eggs 12 ounces fresh strawberries diced 2 teaspoons cornstarch

Instructions

1. Preheat oven to 350 degrees Fahrenheit. Line an 8×8-inch baking pan with parchment paper. Process graham crackers, flour, sugar, and salt into fine crumbs. Mix melted butter into the crumb mixture until moistened. Reserve 2/3 cup of the crumb mixture for topping. Press remaining crumbs firmly into the baking pan. Bake the crust for 12 to 15 minutes until lightly golden. Process cream cheese until smooth and fluffy. Mix in sugar, vanilla extract, and salt. Add eggs one at a time and mix until incorporated. Spread cheesecake filling evenly over the crust. Cook strawberries and cornstarch in saucepan until slightly thickened. Spoon strawberries evenly over the cheesecake filling. Sprinkle reserved crumble topping evenly over the bars. Bake for 30 to 35 minutes until edges are set. Cool completely and refrigerate at least 3 hours before slicing.

Notes

Fresh strawberries work best for this recipe. Chill completely before slicing for cleaner bars. Freeze leftovers for up to one month if needed. Store refrigerated in airtight containers.
