2 tablespoons butter
2 ribs celery, diced
1/2 onion, diced
3 cloves garlic, sliced
1 pound dried split peas
1 pound cooked ham, diced
1 bay leaf
1 quart chicken stock
2 1/2 cups water
Salt to taste
Black pepper to taste
1. Melt butter in a large pot.
2. Cook celery, onion, and garlic until softened.
3. Add split peas, ham, and bay leaf.
4. Pour in chicken stock and water.
5. Bring to a simmer.
6. Cook for 1 hour and 15 minutes until peas become tender.
7. Stir occasionally during cooking.
8. Season with salt and pepper.
9. Serve hot.
Add extra broth if the soup thickens too much.
Leftover ham works perfectly for this recipe.
