A healthy salmon quinoa bowl with fresh vegetables and creamy dressing.

Ingredients

Scale

1 cup quinoa

1 3/4 cups water

4 salmon fillets

1 cup kale

2 carrots

1 can chickpeas

1/2 cup dried cherries

1/2 cup yogurt

1/4 cup tahini

1 tbsp lemon juice

1 garlic clove

Olive oil

Salt and pepper

Instructions

1. Cook quinoa until tender

2. Prepare dressing by mixing ingredients

3. Massage kale with dressing

4. Add carrots chickpeas and cherries

5. Cook salmon in skillet

6. Assemble bowl with quinoa salad and salmon

7. Serve immediately
