Moist and tangy rhubarb muffins with a crunchy spiced topping.

Ingredients

1/2 cup vanilla yogurt

2 tbsp melted butter

2 tbsp vegetable oil

1 egg

1 1/3 cups flour

3/4 cup brown sugar

1/2 tsp baking soda

1/4 tsp salt

1 cup rhubarb

1/4 cup brown sugar (topping)

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup almonds

2 tsp butter

Instructions

1. Preheat oven to 350°F

2. Mix yogurt, butter, oil, and egg

3. Combine dry ingredients

4. Mix wet and dry ingredients gently

5. Fold in rhubarb

6. Fill muffin cups

7. Prepare topping

8. Add topping to muffins

9. Bake 25 minutes

10. Cool before serving

Notes

Do not overmix batter

Use fresh or frozen rhubarb

Toast almonds for better flavor
