1 package sugar free strawberry or raspberry gelatin 1 cup boiling water 1 cup cold water 1/2 cup plain Greek yogurt optional 1/2 cup fresh strawberries or raspberries 1 teaspoon lemon juice Fresh mint leaves for garnish optional

Instructions

1. Bring one cup of water to a boil. Pour the boiling water into a mixing bowl and add the gelatin powder. Stir continuously until the gelatin completely dissolves. Add the cold water and mix well. Stir in lemon juice and fresh berries. If desired mix in Greek yogurt for a creamy texture. Pour the mixture into small dessert cups or a glass dish. Place in the refrigerator for 3 to 4 hours until fully set. Garnish with fresh berries or mint leaves before serving.

Notes

For a creamier texture blend the yogurt thoroughly into the gelatin mixture. Use silicone molds to create fun shapes for parties. Store leftovers covered in the refrigerator for up to three days.
