Creamy pineapple coconut popsicles packed with tropical flavor and refreshing sweetness. Perfect easy summer dessert.

Ingredients

1 can coconut milk

4 cups pineapple chunks

2 tablespoons honey

1/4 cup shredded coconut

1/4 teaspoon coconut extract optional

Instructions

1. Heat coconut milk and honey together in saucepan

2. Stir until mixture becomes smooth and combined

3. Add pineapple chunks to blender

4. Pour coconut milk mixture into blender

5. Add coconut extract if using

6. Blend until smooth

7. Stir shredded coconut into mixture

8. Pour into popsicle molds

9. Freeze for 6 to 8 hours until solid

Notes

Use full-fat coconut milk for creamier texture

Fresh or frozen pineapple both work well

Freeze overnight for easiest unmolding
