1 pound ripe peaches
6 tablespoons honey
Dash sea salt
2 cups full-fat plain yogurt
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1. Preheat oven to 350 degrees Fahrenheit
2. Toss peach slices with 2 tablespoons honey and salt
3. Arrange peaches on parchment-lined baking sheet
4. Roast for 30 to 40 minutes until soft and juicy
5. Mix yogurt, remaining honey, lemon juice, and vanilla extract
6. Cool roasted peaches completely
7. Fold peaches and juices into yogurt mixture
8. Transfer mixture into popsicle molds
9. Insert sticks and freeze for at least 4 hours
10. Remove from molds and serve
