Crispy and fluffy mini baked potatoes made with simple ingredients and ready in 30 minutes.

Ingredients

8-10 baby potatoes

Olive oil

Salt

Black pepper

Garlic powder

Butter

Sour cream

Chives

Instructions

1. Preheat oven to 400°F

2. Grease baking dish

3. Place potatoes in dish

4. Drizzle with oil and season

5. Toss to coat evenly

6. Roast for 20-25 minutes

7. Remove and cool slightly

8. Slice and gently press open

9. Add butter sour cream and chives

10. Serve immediately
