Fresh Mediterranean pasta salad loaded with vegetables, feta cheese, olives, and homemade dressing for an easy summer meal.
8 ounces fusilli pasta
1 English cucumber diced
1 pint cherry tomatoes halved
1 cup baby spinach
1/2 red onion sliced
1/2 cup feta cheese crumbled
1/4 cup kalamata olives halved
1/4 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon oregano
1 teaspoon dried mint
1 garlic clove minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1. Bring salted water to a boil
2. Cook pasta according to package directions
3. Drain and rinse pasta with cold water
4. Whisk together dressing ingredients
5. Add pasta to dressing and toss well
6. Add cucumbers tomatoes spinach onion feta and olives
7. Toss until evenly coated
8. Serve immediately or chill before serving
Store leftovers in airtight container for up to 5 days
Use gluten-free pasta if desired
Add grilled chicken for extra protein
