Fresh marinated tomatoes ripe with olive oil, vinegar, and herbs for a simple and flavorful dish.

Ingredients

3 large ripe tomatoes

1/3 cup olive oil

1/4 cup red wine vinegar

2 tablespoons chopped onion

1 clove garlic minced

1 tablespoon parsley

1 tablespoon basil

1 teaspoon salt

black pepper to taste

Instructions

1. Slice tomatoes into thick pieces

2. Arrange tomatoes in a dish

3. Mix olive oil vinegar garlic onion and herbs

4. Pour mixture over tomatoes

5. Cover and marinate for at least 2 hours

6. Serve at room temperature
