300g biscuits
135g butter
750g cream cheese
125g icing sugar
150g lemon curd
2 lemons zest
3 tsp lemon extract
300ml cream
1. Crush biscuits and mix with butter
2. Press into pan and chill
3. Mix cream cheese sugar and lemon curd
4. Add cream and whisk until thick
5. Spread filling and chill overnight
6. Decorate and serve
Use full-fat cream cheese
Chill at least 4 hours
