2 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
Lemon Filling:
1 can (14 oz) sweetened condensed milk
1/2 cup fresh lemon juice
1 tablespoon lemon zest
2 egg yolks
1. Preheat oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
2. In a bowl mix flour, sugar, baking powder, and salt.
3. Add melted butter, egg, and vanilla extract and mix until crumbly.
4. Press two-thirds of the mixture into the bottom of the prepared pan to form the crust.
5. Bake the crust for 10 minutes.
6. In another bowl whisk condensed milk, lemon juice, lemon zest, and egg yolks.
7. Pour the lemon mixture over the baked crust.
8. Sprinkle the remaining crumble mixture evenly over the filling.
9. Bake for 25–30 minutes until golden on top.
10. Allow bars to cool completely before slicing.
Fresh lemon juice gives the best flavor.
Do not overbake or the filling may become too firm.
Let bars cool completely before cutting for clean slices.
