1 1/4 cup almond flour
1/3 cup erythritol
1 tsp baking powder
1/4 tsp xanthan gum
1/8 tsp salt
2 eggs, room temp
2 tbsp coconut oil, melted
2 tbsp almond milk, unsweetened
1/2 tsp vanilla extract
1/4 tsp liquid stevia
4 tbsp erythritol (for coating)
1 1/2 tsp cinnamon
1. Whisk dry ingredients together.
2. Beat eggs, coconut oil, almond milk, vanilla, and stevia.
3. Combine wet and dry mixtures into batter.
4. Preheat air fryer to 330°F.
5. Fill greased donut molds 3/4 full with batter.
6. Air fry for 8 minutes, test with toothpick.
7. Cool 5 minutes before removing from molds.
8. Coat donuts with erythritol-cinnamon mix.
9. Air fry again at 350°F for 2 minutes.
10. Serve warm and enjoy.
Store in airtight container for 3 days.
Freeze wrapped individually for longer storage.
