This hash brown casserole breakfast is rich, cheesy, and packed with eggs and sausage. A comforting make-ahead breakfast perfect for brunch or holidays.

Ingredients

2 lb frozen hash brown potatoes, thawed

1 lb breakfast sausage

1 small onion, diced

5 large eggs

1/2 cup milk

12 oz shredded cheddar cheese

1/2 tsp onion powder

1/4 tsp garlic powder

Salt and black pepper to taste

Instructions

1. Preheat oven to 350°F and grease a deep baking dish.

2. Cook sausage and onion until browned; drain excess fat.

3. Spread hash browns evenly in the baking dish.

4. Whisk eggs, milk, seasonings, salt, and pepper.

5. Pour egg mixture over hash browns.

6. Sprinkle half of the cheese over the potatoes.

7. Add sausage mixture, then top with remaining cheese.

8. Cover with foil and bake for 60 minutes.

9. Uncover and bake 10 more minutes until set.

10. Rest 5 minutes before serving.

Notes

Thaw and pat hash browns dry to prevent excess moisture.

Let rest before slicing for clean portions.

Can be assembled the night before baking.
