Fresh grilled peach salad with berries, feta cheese, candied pecans, and honey balsamic dressing.
6 fresh peaches
Olive oil
1/2 cup blueberries
1/2 cup blackberries
5 ounces mixed greens
1/2 cup feta cheese crumbles
1/4 cup brown sugar
1 tablespoon water
1 cup pecan halves
Pinch of salt
2 tablespoons balsamic vinegar
1/3 cup olive oil
1 garlic clove minced
1 to 2 tablespoons honey
1/2 teaspoon Dijon mustard
Salt and pepper
1. Prepare candied pecans by melting brown sugar and water in skillet
2. Add pecans and salt and stir until coated
3. Transfer pecans to plate and cool
4. Combine dressing ingredients in mason jar and shake well
5. Slice peaches into wedges and brush with olive oil
6. Preheat grill and oil grates
7. Grill peaches for 2 to 3 minutes per side
8. Arrange greens on serving platter
9. Top with berries grilled peaches feta and candied pecans
10. Drizzle dressing over salad and serve immediately
Use ripe but firm peaches
Store dressing separately for best freshness
Substitute nectarines if desired
