Greek Lemon Chicken Soup (Avgolemono) is a creamy, comforting Mediterranean soup made with chicken, rice, lemon, and eggs.

Ingredients

8 cups chicken broth

1/2 cup lemon juice

1/2 cup carrots

1/2 cup onion

1/2 cup celery

1/4 cup butter

1/4 cup flour

8 egg yolks

1 cup cooked rice

1 cup cooked chicken

Instructions

1. Boil broth with vegetables

2. Simmer 20 minutes

3. Add butter and flour mixture

4. Whisk egg yolks

5. Temper eggs with hot soup

6. Add egg mixture back

7. Add rice and chicken

8. Heat gently and serve

Notes

Do not boil after adding eggs

Use fresh lemon juice

Temper eggs slowly
