Classic gingerbread cookies with soft centers, crisp edges, and warm holiday spices. Perfect for Christmas baking, decorating, and gifting.

Ingredients

3 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tbsp ground ginger

1 tbsp ground cinnamon

1/2 tsp ground cloves

1/2 tsp ground allspice

10 tbsp unsalted butter, softened

3/4 cup brown sugar

2/3 cup molasses

1 large egg

1 tsp vanilla extract

Instructions

1. Whisk dry ingredients together in a bowl.

2. Cream butter and brown sugar until fluffy.

3. Mix in molasses, egg, and vanilla.

4. Gradually add dry ingredients to form dough.

5. Divide dough, wrap, and chill for at least 3 hours.

6. Roll dough to 1/4-inch thickness.

7. Cut shapes and place on lined baking sheet.

8. Bake at 350°F for 9–10 minutes.

9. Cool completely before decorating.

Notes

Chilling is essential for clean cookie shapes.

Do not overbake to keep centers soft.

Cookies freeze well for up to 3 months.
