2 pounds baby potatoes, washed and halved lengthwise
1 cup parmesan cheese, finely grated, divided
3 tablespoons extra virgin olive oil
1 tablespoon garlic, minced
1 teaspoon kosher salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
Fresh parsley, chopped
Salt and pepper to taste
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, combine 1/2 cup parmesan, olive oil, garlic, salt, paprika, and pepper.
3. Add potatoes and toss to coat evenly.
4. Place potatoes cut-side down on the baking sheet and drizzle remaining mixture over top.
5. Roast 40–45 minutes, flipping halfway, until golden and crisp.
6. Remove from oven and sprinkle remaining parmesan over hot potatoes.
7. Garnish with parsley and serve.
