Ingredients

Scale

2 pounds sirloin, ribeye, or New York strip steak, cut into 1-inch cubes

2 tablespoons olive oil, divided

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika (optional)

6 tablespoons unsalted butter

6 cloves garlic, minced

2 tablespoons fresh parsley, chopped

Instructions

1. Pat the steak cubes dry with paper towels and season with 1 tablespoon olive oil, salt, pepper, garlic powder, and smoked paprika.

2. Heat the remaining olive oil in a large skillet over medium-high heat.

3. Cook half of the steak cubes for about 2 minutes per side until browned. Remove from the skillet and repeat with the remaining steak.

4. Reduce the heat to medium and add the butter to the skillet.

5. Once the butter has melted, stir in the minced garlic and cook for about 1 minute until fragrant.

6. Return the cooked steak bites to the skillet and toss until evenly coated with the garlic butter sauce.

7. Sprinkle with fresh parsley.

8. Serve immediately with mashed potatoes, roasted vegetables, rice, or your favorite side dish.

Notes

Use room-temperature steak for the best sear.

Cook the steak in batches to avoid overcrowding the pan.

A cast-iron skillet creates the best crust.

Fresh garlic provides the richest flavor.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently in a skillet over low heat with a little butter.
