Ingredients

1 garlic clove

3 olives

1 tsp capers

1 anchovy

7 oz tomato sauce

1/2 cup water

parsley

salt

2 eggs

Instructions

1. Heat oil

2. Add garlic olives capers anchovy

3. Cook briefly

4. Add tomato sauce and water

5. Simmer 10 minutes

6. Add parsley

7. Crack eggs into sauce

8. Cook until set

9. Serve

Notes

Do not overcook eggs

Serve with bread
