These Easy Chicken Quesadillas are loaded with juicy seasoned chicken, sautéed peppers and onions, creamy avocado, and plenty of melted cheese, all tucked inside crispy golden tortillas. Perfect for a quick weeknight dinner, lunch, or game-day snack.
1 lb boneless skinless chicken breasts, sliced into strips
1 tablespoon vegetable oil
1 bell pepper, thinly sliced
1 small onion, thinly sliced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
Salt, to taste
Black pepper, to taste
4 large flour tortillas
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups shredded cheddar cheese
1 avocado, thinly sliced
2 scallions, thinly sliced
Sour cream, for serving
Guacamole, optional
Salsa or pico de gallo, optional
1. Heat a large skillet over medium-high heat and add a small amount of oil.
2. Cook the sliced peppers and onions for about 5 minutes until softened. Remove and set aside.
3. Add the chicken to the skillet and season with chili powder, cumin, oregano, salt, and pepper.
4. Cook the chicken until golden brown and fully cooked through, then remove from the skillet.
5. Place one tortilla in the skillet over medium heat.
6. Sprinkle Monterey Jack and cheddar cheese over half of the tortilla.
7. Add cooked chicken, peppers, onions, avocado slices, and scallions.
8. Top with additional cheese and fold the tortilla in half.
9. Cook until golden brown and crispy on the bottom, then carefully flip.
10. Cook the second side until golden and the cheese has completely melted.
11. Transfer to a cutting board and slice into wedges.
12. Repeat with the remaining tortillas and filling.
13. Serve immediately with sour cream, guacamole, salsa, or pico de gallo.
Do not overfill the quesadillas or they may fall apart when flipping.
Use rotisserie chicken for an even faster meal.
Monterey Jack, cheddar, mozzarella, Oaxaca cheese, or pepper jack all work well.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a skillet or air fryer to restore crispness.
Add jalapeños or red pepper flakes for extra heat.
