Lime zest
1. Add the frozen pineapple, frozen banana, powdered sugar, coconut milk, and lime juice to a high-speed blender or food processor.
2. Blend until the mixture becomes smooth and creamy.
3. If the mixture is too thick, add a tablespoon of coconut milk at a time until it reaches your preferred consistency.
4. If it’s too thin, blend in a few extra frozen pineapple chunks.
5. Taste and adjust sweetness if desired.
6. Spoon into serving bowls or pipe into cups for a classic soft-serve presentation.
7. Garnish with fresh pineapple, toasted coconut, or mint if desired.
8. Serve immediately and enjoy.
Freeze the pineapple and banana overnight for the creamiest texture.
Use full-fat canned coconut milk for a rich, smooth consistency.
Blend in small intervals and scrape down the sides if needed.
Store leftovers in an airtight container in the freezer for up to 1 month.
Allow frozen leftovers to soften for 10–15 minutes before serving.
