Refreshing cucumber gazpacho made with fresh ingredients, creamy texture, and bright flavors.

Ingredients

4 cucumbers

1 cup Greek yogurt

3 tbsp olive oil

2 tbsp lemon juice

1 tbsp vinegar

1/4 cup fresh dill

salt and pepper

Instructions

1. Peel and slice cucumbers

2. Add ingredients to blender

3. Blend until smooth

4. Season with salt and pepper

5. Chill for 2-3 hours

6. Serve cold with garnish
