This Cucumber Avocado Salad is a fresh, creamy, and refreshing side dish made with crisp cucumbers, ripe avocados, red onion, cilantro, and a simple lime garlic dressing. It’s ready in just 10 minutes and pairs perfectly with grilled meats, seafood, tacos, or sandwiches.

Ingredients

Scale

2 English cucumbers, sliced

3 ripe avocados, cut into chunks

1/4 cup diced red onion

1/3 cup chopped fresh cilantro

3 tablespoons olive oil

3 tablespoons fresh lime juice

1 teaspoon minced garlic

Kosher salt, to taste

Freshly ground black pepper, to taste

Instructions

1. Wash and slice the English cucumbers into thin rounds.

2. Cut the avocados into bite-sized chunks.

3. Dice the red onion and chop the fresh cilantro.

4. Add the cucumbers, avocado, onion, and cilantro to a large mixing bowl.

5. In a small bowl, whisk together the olive oil, lime juice, and minced garlic.

6. Pour the dressing over the salad ingredients.

7. Gently toss everything together until evenly coated without breaking the avocado.

8. Season with kosher salt and black pepper to taste.

9. Serve immediately for the freshest flavor.

Notes

Use ripe but firm avocados for the best texture.

Fresh lime juice gives the dressing the brightest flavor.

English cucumbers are ideal because they have fewer seeds and thinner skin.

For extra protein, add grilled chicken, shrimp, or chickpeas.

Store leftovers in an airtight container in the refrigerator for up to 24 hours.
