Fresh cowboy caviar packed with beans, corn, peppers, and smoky lime dressing. Perfect for parties, snacking, and summer gatherings.

Ingredients

1/3 cup avocado oil

1/3 cup seasoned rice vinegar

1 lime, juiced

3 cloves garlic, minced

1/4 teaspoon garlic powder

1 teaspoon salt

1 teaspoon sugar

1 1/4 teaspoons ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chipotle pepper

2/3 cup diced red onion

1 1/2 cups diced bell peppers

1/3 cup roasted red peppers

1/3 cup pickled jalapeños

1 can black beans, drained

1 can black-eyed peas, drained

2 cups frozen corn

1 cup diced tomato

1/2 cup chopped cilantro

Tortilla chips for serving

Instructions

1. Whisk together all dressing ingredients in a large bowl

2. Rinse diced onion under cold water and drain well

3. Add peppers, beans, peas, corn, tomatoes, and onion to the bowl

4. Stir thoroughly to coat ingredients evenly

5. Cover and refrigerate for 2 to 12 hours

6. Stir occasionally while chilling

7. Add cilantro before serving

8. Taste and adjust seasoning if needed

9. Serve with tortilla chips

Notes

Grilled corn adds extra smoky flavor

Add avocado just before serving for freshness

Store leftovers in the refrigerator for up to 4 days
