Ingredients

7 ounces (200g) cottage cheese

1 cup fresh baby spinach

2 tablespoons Greek yogurt

1 small garlic clove

1 tablespoon olive oil

1 teaspoon lemon juice

Pinch of chili flakes (optional)

Salt, to taste

Freshly ground black pepper, to taste

Optional Garnishes:

Extra virgin olive oil

Chopped fresh spinach

Mixed seeds

Additional chili flakes

Instructions

1. Add the cottage cheese to a blender or food processor.

2. Add the fresh baby spinach.

3. Add the garlic, Greek yogurt, lemon juice, salt, black pepper, and optional chili flakes.

4. Pour in the olive oil.

5. Blend until completely smooth and creamy, scraping down the sides as needed.

6. Taste and adjust the seasoning if necessary.

7. Transfer the dip to a serving bowl.

8. Refrigerate for 15 to 20 minutes to allow the flavors to develop.

9. Garnish with a drizzle of olive oil, chopped spinach, seeds, or extra chili flakes before serving.

10. Serve with crackers, fresh vegetables, toasted bread, or pita chips.

Notes

For an even creamier texture, use full-fat cottage cheese.

Frozen spinach can be used, but thaw and squeeze out all excess moisture first.

Adjust the garlic and chili flakes to suit your taste.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Stir before serving if any separation occurs.

Freezing is not recommended because the texture may become grainy after thawing.
