These Cottage Cheese Egg Bites are soft, fluffy, and packed with protein. Made with eggs, cottage cheese, crispy bacon, and Colby Jack cheese, they’re perfect for meal prep, healthy breakfasts, or grab-and-go snacks.
7 large eggs
1 cup cottage cheese
3/4 cup cooked bacon bits
1 cup shredded Colby Jack cheese
1/4 teaspoon salt
1/4 teaspoon black pepper

1. Preheat the oven to 325°F (163°C).
2. Place a baking pan filled with hot water on the lower oven rack to create steam.
3. Crack the eggs into a medium mixing bowl and whisk until smooth.
