This Cottage Cheese Caesar Bowl is a high-protein twist on the classic Caesar salad. Tender chicken, crisp romaine lettuce, homemade croutons, Parmesan cheese, and a creamy cottage cheese Caesar dressing create a satisfying and healthy lunch or dinner.

4 ounces cooked seasoned chicken breast

2 cups chopped romaine lettuce

1/2 ounce freshly grated Parmesan cheese

1/4 cup Cottage Cheese Caesar Dressing

1/2 cup homemade croutons

For the Cottage Cheese Caesar Dressing

1 cup 2% cottage cheese

1 ounce freshly grated Parmesan cheese

1 large garlic clove

1 tablespoon lemon juice

1/2 tablespoon Worcestershire sauce

1/2 tablespoon Dijon mustard

1/4 cup milk (plus more if needed)

1/4 teaspoon salt

1/4 teaspoon black pepper

For the Croutons

3 slices white bread, cubed

Light spray avocado oil or olive oil

Italian seasoning

Garlic powder

Salt

Black pepper

Instructions

1. Preheat the oven to 375°F and line a baking sheet with parchment paper.

2. Cut the bread into cubes, spray lightly with oil, season with Italian seasoning, garlic powder, salt, and pepper, then bake for 12 to 15 minutes, flipping halfway, until golden. Let cool.

3. Cook and season the chicken if it has not already been prepared. Slice into bite-sized pieces.

4. Add the cottage cheese, Parmesan, garlic, lemon juice, Worcestershire sauce, Dijon mustard, milk, salt, and pepper to a blender. Blend until smooth, adding extra milk if needed.

5. Place the chopped romaine lettuce into a large serving bowl.

6. Top with the cooked chicken, grated Parmesan cheese, and homemade croutons.

7. Drizzle generously with the cottage cheese Caesar dressing.

8. Serve immediately and enjoy.

Notes

Blend the dressing until completely smooth for the best texture.

Rotisserie chicken works well to save time.

Store the dressing separately for up to 5 days.

Keep the croutons separate until serving so they stay crunchy.

Use freshly grated Parmesan for the richest flavor.
