This Cottage Cheese Bread is an easy, high-protein, gluten-free flatbread made with blended cottage cheese and eggs. Soft, flexible, and perfectly golden, it’s ideal for sandwiches, wraps, meal prep, or healthy snacks.
Cooking spray
1 (16-ounce) container cottage cheese (full-fat or low-fat)
4 large eggs
1/4 teaspoon kosher salt (optional)
1 teaspoon dried oregano, Italian seasoning, thyme, or rosemary (optional)
1. Preheat the oven to 375°F (190°C). Line a 13×18-inch rimmed baking sheet with parchment paper and lightly coat it with cooking spray.
2. Add the cottage cheese, eggs, and kosher salt (if using) to a blender or food processor.
3. Blend until the mixture is completely smooth and creamy.
4. Pour the batter onto the prepared baking sheet.
5. Spread it into a thin, even layer using an offset spatula, reaching all the edges of the pan.
6. Sprinkle the dried herbs evenly over the top if using.
7. Bake for 25 to 30 minutes, or until the flatbread is set and lightly golden brown.
8. Allow the bread to cool for about 5 minutes.
9. Cut into 2 large flatbreads or 4 smaller pieces.
