Fresh corn salad made with tomatoes, cucumber, feta cheese, herbs, and tangy homemade dressing.
4 ears fresh corn
1 heaping cup grape tomatoes halved
1 cup diced English cucumber
1/3 cup diced red onion
2/3 cup crumbled feta cheese
3 tablespoons chopped parsley
2 tablespoons chopped basil
1/4 cup olive oil
1 1/2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 1/2 teaspoons honey
1/2 teaspoon minced garlic
Salt and black pepper
1. Whisk olive oil vinegar lemon juice honey garlic salt and pepper together
2. Refrigerate dressing while preparing salad
3. Bring water to a boil and prepare ice bath
4. Cook corn for 3 minutes
5. Transfer corn to ice water and cool
6. Drain corn and cut kernels from cob
7. Combine corn tomatoes cucumber onion feta parsley and basil in bowl
8. Pour dressing over salad and toss gently
9. Serve chilled and enjoy
