14 ounces full-fat coconut milk
1 teaspoon lime zest
3 tablespoons lime juice
1/3 cup maple syrup
1/4 teaspoon salt
1. Add coconut milk, lime juice, lime zest, maple syrup, and salt to blender
2. Blend briefly until smooth
3. Pour mixture into popsicle molds
4. Leave room at top for expansion
5. Insert popsicle sticks
6. Freeze for 4 to 6 hours or overnight
7. Run molds under warm water before serving
Use full-fat coconut milk for creamiest texture
Adjust lime juice or maple syrup to taste
