A silky, rich chocolate mousse made with dark chocolate and whipped cream. Perfect for beginners and elegant enough for special occasions.
3.5 ounces dark chocolate
1 tablespoon unsalted butter
2 large egg yolks
1 tablespoon white sugar
1/4 cup water
Pinch of salt
1/2 cup chilled heavy whipping cream
1. Chop chocolate and place with butter in a bowl.
2. Whisk egg yolks, sugar, water and salt in a metal bowl.
3. Cook over medium-low heat until thick and foamy.
4. Add chocolate and butter and whisk until smooth.
5. Cool mixture to room temperature.
6. Whip chilled cream to medium peaks.
7. Fold one-third of chocolate mixture into whipped cream.
8. Fold in remaining chocolate gently.
9. Transfer to serving dishes.
10. Chill for at least one hour before serving.
Use high-quality dark chocolate.
Do not over-whip the cream.
Fold gently to preserve air.
