Deeply chocolatey chocolate cupcakes with a moist crumb and rich chocolate fudge frosting. Easy to make and perfect for any celebration.
3/4 cup all-purpose flour
3/4 cup caster sugar
1/2 tsp baking soda
Pinch of salt
120g unsalted butter
60g dark chocolate
1/2 cup cocoa powder
1/2 cup milk
1/4 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 1/2 tsp white vinegar
Frosting:
120g unsalted butter
1/2 cup cocoa powder
2 1/2 cups powdered sugar
3 to 4 tbsp milk
Sprinkles for decoration
1. Preheat oven to 350°F and line a 12-cup muffin pan.
2. Sift flour, sugar, baking soda and salt together.
3. Melt butter and dark chocolate until smooth.
4. Whisk in cocoa powder.
5. Add milk, oil, eggs, vanilla and vinegar.
6. Mix until smooth.
7. Add dry ingredients and whisk until lump free.
8. Fill cupcake liners three-quarters full.
9. Bake for 18 to 20 minutes.
10. Cool completely on a wire rack.
11. Prepare frosting by mixing melted butter, cocoa powder, powdered sugar and milk.
12. Frost cooled cupcakes and decorate as desired.
Use 70% cocoa dark chocolate for best flavor.
Do not overbake.
Store in airtight container for up to 3 days.
Freeze for up to 3 months.
