A fresh and healthy chickpea salad with vegetables, herbs, and a zesty lemon dressing.

Ingredients

3 cups chickpeas cooked

2 tablespoons olive oil

2 tablespoons lemon juice

1 garlic clove grated

1 teaspoon Dijon mustard

2 cups tomatoes halved

1/2 cucumber diced

1/2 cup pickled onions

1/2 cup olives

1/2 cup parsley chopped

1/4 cup dill chopped

1/4 cup mint chopped

Instructions

1. Whisk olive oil lemon juice garlic and mustard

2. Add chickpeas and vegetables

3. Toss to combine

4. Add herbs and mix again

5. Season to taste

6. Serve fresh or chilled
