4 boneless skinless chicken breasts

1 green bell pepper, sliced

1 red bell pepper, sliced

2 cups low-sodium chicken broth

2 cans black beans, rinsed

1 tbsp onion powder

1 tsp ground cumin

1 tsp dried oregano

1/2 tsp chili powder

1/2 tsp paprika

Salt and pepper to taste

Cooked rice or cauliflower rice (for serving)

Shredded cheese

Avocado or guacamole

Sour cream or Greek yogurt

Fresh cilantro

Instructions

1. Mix onion powder, cumin, oregano, chili powder, and paprika to create taco seasoning

2. Place chicken in the slow cooker

3. Add bell peppers, salt, pepper, and seasoning

4. Pour chicken broth over the mixture

5. Cook on low for 6 hours until chicken is tender

6. Shred chicken using two forks

7. Add black beans and cook for 30 more minutes

8. Serve over rice or greens
