Easy Chicken Fried Rice packed with tender chicken, vegetables and savory Asian flavors.
2 tbsp oil
2 eggs
150g chicken breast
2 garlic cloves minced
1/2 onion chopped
120g bacon chopped
1 small carrot diced
1/2 cup corn
1/2 cup peas
2 cups cooked rice
3/4 cup green onions
2.5 tbsp Chinese cooking wine
1 tbsp oyster sauce
3 tbsp soy sauce
1/2 tsp sesame oil
1/4 tsp white pepper
1. Mix sauce ingredients together
2. Coat chicken with 2 teaspoons sauce and marinate 10 minutes
3. Scramble eggs and set aside
4. Cook bacon onion and garlic
5. Add vegetables and cook briefly
6. Add chicken and cook through
7. Add rice and remaining sauce
8. Stir fry until heated
9. Return eggs and green onions
10. Serve immediately
Use day-old rice for best texture
