Rich homemade caramel ice cream made with buttery brown sugar caramel and creamy custard base.

Ingredients

1/4 cup butter

1 cup packed brown sugar

1 1/2 cups heavy cream divided

4 egg yolks

1/2 cup granulated sugar

1 1/2 cups whole milk

1/4 teaspoon kosher salt

1 teaspoon vanilla extract

Instructions

1. Freeze ice cream maker bowl for at least 24 hours

2. Melt butter and brown sugar in saucepan until bubbling

3. Whisk in 1/2 cup heavy cream and cook until smooth

4. Whisk egg yolks and sugar until pale yellow

5. Heat milk and salt until simmering

6. Temper eggs slowly with hot milk

7. Return mixture to saucepan and cook until thickened

8. Strain custard into bowl

9. Stir in remaining cream, vanilla, and caramel

10. Chill mixture for at least 3 hours

11. Churn in ice cream maker until soft serve consistency

12. Transfer to loaf pan and freeze for at least 4 hours before serving

Notes

Use full-fat dairy for creamy texture

Chill all ingredients thoroughly before churning

Let ice cream soften slightly before scooping
