2 tsp smoked paprika 1 tsp oregano 1 tsp thyme 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp cayenne pepper 1/4 tsp black pepper 1/4 tsp salt 1 Tbsp olive oil 1 Tbsp butter 1 lb boneless skinless chicken breast 1 yellow onion diced 1/2 lb penne pasta 15 oz fire roasted diced tomatoes 2 cups chicken broth 2 oz cream cheese 3 green onions sliced
1. Mix all Cajun seasoning ingredients in a small bowl Cube chicken and coat with Cajun seasoning Heat olive oil and butter in a large skillet Cook chicken until lightly browned Add onion and cook until softened Add pasta, tomatoes, and chicken broth Bring to a boil then reduce heat Cover and simmer for 10 minutes stirring occasionally Add cream cheese and stir until melted Top with green onions and serve
