3 boneless skinless chicken breasts (about 8 ounces each), diced
1 teaspoon olive oil
1/2 cup diced red onion
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/4 teaspoon kosher salt
1 cup low-sodium black beans, rinsed and drained
1/2 cup buffalo sauce
3 cups cooked brown rice
1/2 cup part-skim shredded cheddar cheese
1/4 cup chopped scallions
