This broccoli cheddar quiche is a creamy and savory dish made with eggs, fresh broccoli, cheddar cheese, and a flaky pie crust. Perfect for breakfast, brunch, or a light dinner.

1 (9-inch) deep dish pie crust

1 teaspoon vegetable oil

2 cups finely chopped broccoli

4 large eggs

1/2 cup milk

1 tablespoon Dijon mustard

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 cup shredded Cheddar cheese

1/4 cup grated Parmesan cheese

Instructions

1. Preheat oven to 350°F (175°C).

2. Place pie crust in a 9-inch pie dish and prick with a fork.

3. Brush crust lightly with oil and bake for 8 minutes.

4. Microwave broccoli for about 4 minutes until slightly tender.

5. In a bowl whisk eggs, milk, Dijon mustard, oregano, thyme, salt, and pepper.

6. Stir the cooked broccoli into the egg mixture.

7. Pour mixture into the prepared crust.

8. Sprinkle cheddar and Parmesan cheese on top.

9. Bake for about 40 minutes until the center is set.

10. Let the quiche rest for 10 minutes before slicing and serving.

Notes

Lightly cooking the broccoli prevents excess moisture in the quiche.

Allow the quiche to rest after baking for cleaner slices.

You can substitute half-and-half or cream for milk for a richer filling.
