Creamy Mexican street corn dip made with charred corn, lime, cheese, and spices. Perfect appetizer for parties.

Ingredients

2 tbsp butter

4 cups corn

1 jalapeño

1 clove garlic

6 tbsp cotija cheese

3 tbsp mayonnaise

2 tbsp cilantro

1 lime juice

1 tsp chili powder

Instructions

1. Melt butter in skillet

2. Cook corn, jalapeño, garlic until charred

3. Remove from heat

4. Stir in cheese, mayo, lime juice

5. Add chili powder and cilantro

6. Serve warm with chips

Notes

Use grilled corn for best flavor

Adjust spice level to taste
