Roasted beet salad with feta, featuring sweet beets and tangy vinaigrette.

Ingredients

4 beets

1/4 cup shallot

2 tbsp parsley

2 tbsp olive oil

1 tbsp balsamic vinegar

1 tbsp red wine vinegar

salt

pepper

1/4 cup feta cheese

Instructions

1. Preheat oven to 400°F

2. Wrap beets in foil

3. Roast 45-60 minutes

4. Cool and peel

5. Slice beets

6. Prepare dressing

7. Combine ingredients

8. Top with feta

9. Serve
