Ingredients

Scale

3/4 pound beef round steak, sliced thin

1 pound broccoli florets

1/3 cup oyster sauce

1/3 cup dry sherry

2 teaspoons toasted sesame oil

1 teaspoon soy sauce

1 teaspoon sugar

1 teaspoon cornstarch

3 tablespoons vegetable oil

1 slice fresh ginger

1 garlic clove, smashed

Cooked white rice for serving

Instructions

1. Whisk together the oyster sauce, sherry, sesame oil, soy sauce, sugar, and cornstarch until smooth.

2. Place the sliced beef into the marinade and refrigerate for 30 minutes.

3. Heat 2 tablespoons oil in a wok or skillet over medium-high heat.

4. Add ginger and garlic and cook for 1 minute to flavor the oil, then remove and discard.

5. Add the broccoli and stir-fry for 5 to 7 minutes until bright green and nearly tender.

6. Transfer the broccoli to a plate.

7. Add the remaining oil to the pan if needed.

8. Add the marinated beef and cook until browned and the sauce thickens.

9. Return the broccoli to the skillet and toss everything together.

10. Cook for 2 to 3 minutes until heated through.

11. Serve hot over steamed rice.

Notes

Slice the beef very thinly across the grain for the most tender texture.

Flank steak or flat iron steak can replace round steak.

Store leftovers in an airtight container for up to 4 days.

Reheat gently with a splash of broth or water.

Serve with white rice, fried rice, or noodles for a complete meal.
